Beware: It's hot! How to Clean a Commercial Fryer Step by Step

Burns from hot oil are a serious risk because oil has a high boiling point, can catch fire, and is thick.

When the temperature is the same, hot oil can hurt skin more than hot water. Even when cooking at home, burns from hot oil can be so bad that they need surgery and skin grafts.

When working with commercial fryers in a commercial kitchen, you need to be careful. Even more so when you change the oil or clean the fryer.

Get the tools you need to clean your fryer.

The first step in cleaning a deep fryer is to get all of the supplies you need to clean it.

Protective gear is the most important thing to bring.

You'll need nitrile gloves. These kinds of gloves will keep your skin from getting hurt. Also, wear safety glasses so that hot oil doesn't splash into your eyes.

Oil makes clothes look dirty and can hurt your skin. Put on a heavy vinyl apron to keep your clothes and skin from getting dirty.

You will also need a long-handled scrub brush. 

This will let you clean a deep fryer by getting to the small parts.

Buy a fryer coil brush if you can. This small brush can reach places where the other one can't.

A fryer rod is a cool tool that you can use to pick bits of food out of the drain tube.

A drain valve extension is a metal tube that can be threaded onto the drain flow tube to empty the fryer oil. You'll also need a stock pot or a bowl or bucket made of stainless steel to catch the used oil from frying.

How to Clean a Fry Pan

When you have everything you need, you can start cleaning the deep fryer.

First, turn the fryer off and let the oil cool down. Make sure the oil is less than 150 degrees Fahrenheit by using a thermometer.

Get any baskets out of the way and move them to the sink.

Next, carefully pour the oil back into its original container. Use a slotted ladle to get any crumbs out of the fryer's bottom.

Use a metal spatula to loosen the gunk on the sides of the fryer once the oil is out. Use a wet paper towel to clean the sides.

Now you can put the commercial fryer in the sink and fill it with hot water. Pour a little dish soap in.

Use the brushes you have to clean the fryer. Pour out the soapy water and put clean water back into the fryer.

Put 1/2 cup of white vinegar in the fryer. Use a clean cloth to wipe down the inside of the fryer.

Rinse it one more time with hot, clean water.

Use a lint-free cloth to dry the fryer all over. Use a damp rag to clean the heating element. 

Then let it dry.

Clean the counter and the baskets in the fryer.

When you clean a deep fryer, you'll also need to clean the frying baskets and the counter in front of the deep fryer.

Spray the counter with a degreasing spray and use a lot of it. Give it at least 10 minutes to soak in while you work on the fryer baskets.

Put hot water and a squirt of dish soap in the sink. Soak the frying baskets in water and use a wet rag to clean them.

How to Cook in a Deep Fryer

A simple way to clean a deep fryer is to put boiling water and a special cleaning solution in it. 

This is called a boil-out. This method gets rid of stuck-on grease and dirt.

You'll need a fryer cleanout rod, a high-temperature fryer brush, and deep fat fryer cleaning solution to boil out a deep fryer.

Instructions

First, empty the fryer of all grease. Next, clean out the drain line with a fryer cleaning rod. Rinse the fryer with hot water to get rid of any fat that is still inside.

Then, fill the deep fryer up to 4 inches from the top with cool water. Check the directions on how to clean your deep fryer and add the amount of solution that it says to.

For 20 minutes, bring the deep fryer to a slow boil. Slowly let the fryer drain.
